The pancake phenomenon...
Pancakes are undoubtedly one of the most underrated and overrated foods out there. The simple idea of cooking batter on a hot surface into a flat "pancake" has literally been around for centuries. Naturally, there is an entire chain of restaurants devoted to serving them all day, and even a national pancake day (Feb. 28). So it only seems obvious that the next step after blueberry and banana will be gourmet pancakes...So far I've only come up with a few ideas; hibiscus tea infused raspberry pancakes, and pear compote topped pancake on a bed of blackberries.
What is your favorite way to eat pancakes?

ReplyDeleteWe don't have a favorite, well I guess if you asked hubby it would be plain buttermilk. The girls and I love to make pancakes! Cinnamon, sweet potato pancakes with marshmallow syrup, banana pancakes, chocolate chip, buckwheat with peanut butter and bananas, blueberry , dutch puff (bowl) pancakes with fresh strawberries in the summer or cinnamon apples after a fall trip to the orchard, red velvet, lemon with mascarpone... the list goes on!!!

DeleteHere is my recipe:
Red Velvet Pancakes
2 cups all-purpose flour (I use whole wheat white)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons granulated sugar
2 tablespoons unsweetened cocoa powder
2 large eggs
1-1/2 cups buttermilk (I make them with skim milk and 1 ½ TBSP lemon juice)
1/2 cup plain 0% Greek Yogurt
Red gel food coloring
4 teaspoons vanilla extract
1/2 cup (approx) mini chocolate chips
Mix together dry ingredients, in a separate bowl (or bowl used to make buttermilk using skim milk and lemon and letting sit for 5 min) mix wet ingredients. Mix wet ingredients into dry. Stir in mini chocolate chips.
Cream Cheese Glaze (syrup):
4oz cream cheese softened
3TBSP (aprox) powder sugar
splash of vanilla
milk to thin out
Blend with mixer until smooth and as thick/thin as you want.
Sprinkle a few extra chips on pancakes after glaze if you want. :)
